Dark Chocolate and Pecan bark

OK, It’s no secret i love chocolate. Like I LOVE chocolate, I’m also on a mission to make healthy eating choices that satisfy my sweet tooth while nourishing my body.

Lets talk chocolate – for this recipe, use the highest quality chocolate you can afford. I prefer to use a low sugar, dairy free chocolate, and make my Pecan bark a healthy, antioxidant packed snack.

Below is a recipe for two of my favourite Pecan barks, but get creative, you know what you like to snack on and the key here is to be creative and have fun eating healthy. #pecansforhealth

Ingredients:

Berry Blast
  • 500 g dark chocolate, melted minimum 70% cocoa
  • 130 g pecans Crumble half the pecans, keep the other half whole (try our Maple Roaasted Pecans!)
  • 50 g dried cranberries
  • 50 g dried blueberries
  • 1 tsp cinnamon powder
Coconut Crunch
  • 500 g dark chocolate, melted minimum 70% cocoa
  • 130 g pecans Crumble half the pecans, keep the other half whole (try our Maple Roaasted Pecans!)
  • 50 g toasted coconut
  • 50 g toasted sesame seeds
  • 50 g chia seeds

Instructions:

  1. This recipe works best if you temper the chocolate, tempered chocolate will have a shiny appearance, will break off with a snap and has a smooth mouth feel. To temper chocolate follow the instructions below
  2. Over a pot of boiling water, place 2/3 of the chocolate roughly chopped into a stainless steel or glass bowl. Do not stir! Allow to slowly melt until about 2/3 melted. Once it's roughly 2/3 melted, start to slowly stir the chocolate
  3. Once fully melted remove from the heat and add the remaining chopped chocolate. Keep stirring off the heat until all the chocolate is melted
  4. Continue to stir until the chocolate is at body temperature. The best way to test this is dabbing a small amount on your wrist - I prefer to dab onto my lip for the temperature and taste test combo
  5. Once your chocolate is melted, using a spatula spread a thin and even amount onto a baking paper lined baking tray, then let the party start!
  6. Sprinkle the pecans, nuts, seeds and dried fruits onto the surface of your melted chocolate. Add any spices you desire and allow to cool on a bench
  7. Do not cool in the fridge! Once your bark is set, snap off and store in a cool spot out side of the fridge.

Notes:

Snack any time anywhere, add to a cheese platter to wow friends or pop into a jar as a homemade gift.
